Italian Bean Soup

This delicious Italian Bean Soup recipe is simple and easy take on a traditional Italian dish. Serve with your favorite pasta noodles and some freshly grated parmesan cheese!

Ingredients

  • 15.5 oz package Hurst's Italian Bean Soup

  • 1 lb ground Italian sausage (mild or hot)

  • 2 tbsp olive oil

  • 1 cup diced white onion

  • 1 cup diced carrot

  • 1 cup diced celery

  • 4 cups chicken broth

  • 7 cups water

  • 2 cups tomato or marinara sauce

Cooking Directions

  1. Rinse and sort through beans. Check for any unwanted debris and discard.

  2. In a large soup pot over medium-high heat, add olive oil and brown the sausage.

  3. Add diced onion, carrot, and celery. Cook for 5-8 minutes, stirring to evenly cook the vegetables.

  4. Add the broth, water, rinsed beans and included seasoning packet. NO tomato sauce yet! Stir to combine.

  5. Turn heat to high and bring to a boil. Once boiling, add lid to the pot and reduce heat to low. Simmer covered for 2-2.5 hours. Stir occasionally.

  6. Check beans for doneness. If tender, add in tomato sauce. Continue to cook covered on low until ready to serve.

  7. Serve over pasta and top with Parmesan cheese.

Tips

  • You can substitute Italian sausage for 1 lb boneless chicken breast (cut into pieces) if preferred.
