Instant Pot 15 Bean Salsa Chili

If you’re looking for a delicious, hearty, and comforting meal that’s also incredibly easy to prepare in your pressure cooker, look no further than Instant Pot 15 Bean Salsa Chili.

Instant Pot 15 Bean Salsa Chili

Ingredients

  • (1) 20oz. Hurst’s Hambeens 15 Bean Soup & Seasoning Packet

  • (1) teaspoon olive oil

  • 1 lb 85/15 ground beef

  • 1 medium onion, diced

  • 6 cups water (hot water helps speed up cook time)

  • (1) tablespoon chili powder ½ teaspoon salt

  • (1) 16 oz. jar (2 cups) chunky salsa, room temperature

  • (1) 6 oz. can tomato paste

  • (2) 4 oz. cans green chiles, mild

  • Optional Garnish: Grated cheese, Cilantro, Tortilla Chips

Cooking Directions

  1. Rinse beans and remove any debris; Put beans in a large pot covered with 8 cups of water and allow to soak for 8-12 hours.

  2. Set the Instant Pot to sauté on high heat. Season the ground beef with ½ teaspoon salt. When hot add the teaspoon of olive oil, the ground beef and the onion, cook and stir occasionally until the ground beef is no longer pink. Turn off and drain the grease.

  3. Remove the meat mixture to a container. We will be adding it at the end of the cooking process. I usually just let it cool on the counter, but you can also put it in a container in the refrigerator during the wait time.

  4. Deglaze the Instant Pot with 1 cup of your water. Use a wooden spoon to loosen any bits that may have gotten stuck to the bottom of the Instant Pot. Add the tomato paste, chili powder, and the green chiles and stir.

  5. Add the drained beans and the remaining 5 cups of water and stir.

  6. Put on the lid and pressure cook on high for 25 minutes. Allow natural release at the end of cook time for 15 minutes, before carefully releasing remaining pressure.

  7. Add the seasoning packet and stir. Stir in the ground beef and onion mixture. Stir in the salsa.

  8. Garnish with shredded cheese, fresh cilantro, and tortilla chips.

Tips

If you do not have time to soak: Rinse beans and then cook with 8 cups of water (instead of 6). Cook on HIGH pressure for 50 minutes, let the pressure naturally release for 15 minutes. Then follow recipe.
