20 oz. Hurst's Cajun Red Beans with seasoning packet
(1 lb.) Smoked or Andouille Sausage, diced.
(1) Medium sized onion, diced.
(1) Green bell pepper, diced.
(2-3) Celery ribs, diced.
(2) cloves garlic, chopped.
(8 cups or 64 oz) chicken broth (or water)
(1-2 tbsp.) Olive oil

20 oz. Hurst's Cajun Red Beans with seasoning packet
(1 lb.) Smoked or Andouille Sausage, diced.
(1) Medium sized onion, diced.
(1) Green bell pepper, diced.
(2-3) Celery ribs, diced.
(2) cloves garlic, chopped.
(8 cups or 64 oz) chicken broth (or water)
(1-2 tbsp.) Olive oil
Pour rinsed beans into a large pot or bowl and cover with 10 cups of water. Allow beans to soak overnight or for at least 4 hours.
Drain excess water from soaked beans.
In a large soup pot or dutch oven over medium-high heat: Add olive oil, then sauté sausage, onion, pepper, and celery for 5-10 minutes.
When the vegetables begin to brown, add chopped garlic and cook for an additional 5 minutes.
Add soaked beans and 8 cups of water or broth. Turn the stove to HIGH heat and bring the pot to a rolling boil.
Boil for 5 minutes, then reduce the heat to low, cover the pot with a lid, and simmer for 1.5- 2 hours. Stir occasionally.
Check beans for doneness. If completely tender, add in the contents of the included seasoning packet.
Continue to simmer on low for an additional 30 minutes, then keep warm until ready to serve.
If you prefer a thicker consistency, we recommend using a spoon or ladle to mash a portion of the beans against the sidewall or bottom of the pot. Then stir to thicken.
Serve over rice and top with your favorite Louisiana hot sauce!
Recommended:

Add 1-2 dry bay leafs while beans simmer
