This "Pizza" Beans recipe is exactly as it sounds; a pot full of beans that taste like pizza! (It may even get your picky eater kids to finally enjoy beans!) This recipe can easily be made on the stove top/oven (Dutch oven) or in a slow cooker (slow cooker recipe in tips section at the bottom of page). Customize with your favorite toppings like mushrooms or black olives, but don't forget breadsticks or garlic bread for dunking!

Ingredients

  • 1- package 15 BEAN SOUP®
  • 1- white onion, diced
  • 2- green bell peppers, diced
  • 3- cloves garlic, chopped
  • 1lb. ground Italian sausage (mild, sweet, or hot, it's your choice!)
  • 6oz. sliced pepperoni, cut into quarters
  • 7- cups chicken stock
  • 24oz. of your favorite marinara sauce
  • Shredded mozzarella for topping

Cooking Directions

  1. Rinse and sort through the beans. Check for any debris and discard. Pour beans into a large bowl or pot, cover with water by 2" and allow to soak overnight (or at minimum 4 hours). When ready to cook, discard the excess water.
  2. Turn stove to medium-high, and in a large Dutch oven sauté the ground sausage and pepperoni until sausage is completely browned.
  3. Spoon out the meats, pour off any excess grease, then add the onions, peppers, and garlic. Cook for 5 minutes, then add the chicken stock and turn heat to high. Use your spoon to scrape off any browned bits on the bottom of the pot as this will add great flavor. Add the meats & soaked beans (not marinara yet!) back into the pot and bring to a boil.
  4. Cover the pot and place into a 350º oven for 2 hours, stir the beans half way through the time.
  5. When beans are completely tender, stir in the marinara sauce (add Hurst's Ham flavor for an even MEATIER taste!). Put pot back in the oven for an additional 20 minutes, then turn oven to warm until ready to serve.

Cooking Tips

  • Slow Cooker recipe: Follow steps 1-3 above, then add everything EXCEPT marinara sauce into a slow cooker. Turn to high and cook for at least 5 hours. When beans are tender, stir in marinara sauce.
  • Suggested add-ins: Sautéd mushrooms, black olives, banana peppers, basically any of your favorite pizza toppings!
  • Add Hurst's Ham flavor for an even MEATIER taste!
