The "off the bag" recipe for Spanish American Black Bean Soup. A family favorite!

  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1/2 pound smoked ham.

Cooking Directions

  1. Soaking: Place beans in a large pot, cover with 2 quarts of water. Allow Beans to soak overnight, or at least 8 hours.
  2. After soaking, drain water, add 7 cups of water. Bring to boil. Reduce heat and simmer gently for about two hours or until beans are tender.
  3. In a large skillet, over medium heat, sauté 1 large onion (diced), 1 green bell pepper (diced), and 1/2 pound smoked ham for about 5 minutes.
  4. Add sautéed mix to the beans. Simmer for 1/2 hour, add contents of seasoning packet and simmer for an additional 1/2 hour.
